Chicken Tortilla Soup
Today is the last day of February, but the first official day of spring will not arrive till next month. The pressure is on. I feel like this is my last chance to do a post about soup. My family loves soup – all kinds. We like them puréed, chunky, vegetarian, meaty, delicate, hearty, noodled, potatoed, with beans, or without beans. If you can get it in the pot, we’ll chew it, spoon it, sip it, drink it, or slurp it. It matters not if its a chowder, a soup or a stew; we like it cold or hot, thick or thin, first day or left over, and we don’t mind if it has milk or broth or juice or plain old water.
